Summer Quinoa

This was our second post originally written on Sept 1, 2014.  This weekend we brought this salad to share with our family at a weekend getaway and it was a smash hit!!  I hope you all enjoy it! ~Jillian

As summer is nearing an end I had to sneak my favorite Quinoa dish in one last time!

Summer Quinoa Lable

If you have never cooked with Quinoa before it is a wonderful superfood!  It is packed with protein, fiber, iron, and magnesium.  It is both gluten free and loaded with antioxidants.  Fully cooked Quinoa is soft and has little white rings around it, like so:

This recipe is full of the summers freshest ingredients, often found plentifully at your local farmers market.

Summer Quinoa Recipe

Ingredients:

  • 1 cup uncooked quinoa
  • 2 cups water
  • 1 cup of blueberries
  • 1 cup of corn
  • 1/2 cucumber
  • 1/2 green pepper
  • 1/2 jalapeño

Lemon Dressing:

  • Juice from one lemon (about 4 tablespoons)
  • 1 tablespoon white balsamic vinegar
  • 1 tablespoon olive oil

Directions:

  1. Cook quinoa: Bring water to a boil. Add quinoa and simmer on low with lid on.  When quinoa is fully cooked allow to cool in the refrigerator for about 2 hours.
  2. Add blueberries, corn, cucumber, green pepper, and jalapeño to cooled quinoa.
  3. Prepare dressing and add to quinoa.

It can be excellently paired with Grilled Chicken.
