Greek Salad

This is a delicious healthy salad that will keep you light and full.

Chicken Gyro Salad

Tzatziki Sauce

  • 1 cucumber
  • 2 cloves of garlic
  • 1 teaspoon of balsamic vinegar
  • 1 teaspoon lemon juice
  • 1 teaspoon olive oil
  • 1 cup of greek yogurt
  • salt and pepper to taste

Salad

  • 1 grilled chicken breast
  • 3 cups spring mix
  • 2 tablespoons red onion chopped
  • 2 tablespoons kalamata olives
  • 1 tablespoon feta cheese

Optional Add-ons

  • tomatoes
  • whole wheat naan

Directions:

  1. Peel cucumber, cut out the seeds.  The remaining chop as small as possible.  I find it easiest to put the cucumber and garlic in my chopper.  Mix together chopped cucumber, chopped garlic, balsamic vinegar, lemon juice, olive oil, greek yogurt, salt, and pepper in bowl. Allow tzatziki sauce to chill in refrigerator for an hour.
  2. Grill chicken breast seasoned with garlic salt and pepper.
  3. Place chicken breast, red onion, kalamata olives, and feta cheese on a bed of spring mix.

The best part of this recipe is its diversity.  My husband Keith isn’t a big fan of salads for dinner so I wrap his up in a Naan bread warmed with extra tzatziki sauce.  He loves it and doesn’t even know he is still eating healthy (shhh don’t tell him.)
