Quinoa Peanut Butter Granola Bars

Have I ever mentioned I love granola bars.  They are the perfect grab and go snack.  I love my Paleo Vanilla Bean Nut Bars, but sometimes I am looking for of a traditional granola bar and this recipe is perfect to fill that craving!

First you are going to preheat oven to 350 degrees.  Toast quinoa, oats, coconut, almonds, cashews, pumpkin seeds, sunflower seeds on baking sheet for 8 minutes.

Place toasted mixture in the food processor and process minimally to break up large nuts.

IMG_1834Bring peanut butter, honey, and coconut oil to a boil in a small sauce pan.

IMG_1836Add peanut butter mixture to the toasted mixture in the food processor and mix.  Press bars in lined baking dish.  It is important to pack down.  Bake for 10 minutes.

IMG_1837Allow to cool then cut bars.  Place in freezer for 20 minutes to allow to cool and fully harden.  *This is such an important step!  Just cut the bars then freeze them!  Once they are frozen they will keep their shape even if they thaw.  Otherwise they will crumble.  (See bottom left corner.)

Ingredients
  • 1/2 cup quinoa
  • 1/2 cup rolled oats
  • 1/2 cup unsweetened raw coconut
  • 1/2 cup unsweetened raw almonds
  • 1/2 cup unsweetened raw cashews
  • 1/4 tsp salt
  • 2 tablespoons unsweetened raw pumpkin seeds
  • 2 tablespoons unsweetened raw sunflower seeds
  • 1/2 cup peanut butter
  • 1/4 cup honey
  • 2 tablespoons coconut oil
