Paleo Vanilla Bean Ice Cream

As you may know Saturday was my birthday!  Thank you for all your kind birthday wishes on Facebook and IG!  Like many other special days (Valentines day, New Years day) it is difficult to resist temptation and maintain a clean lifestyle on your birthday.  Now many of you are thinking, you only have a birthday once a year why don’t you just splurge on the icecream?  For me, I am lactose intolerant and normal ice-cream isn’t very satisfying.  Also, I did splurge on a fancy dinner out with my husband, so eating a clean ice-cream was the perfect dish to end my night.

Ice Cream

This ice-cream is so delicious and decadent you won’t even notice it is clean!  It is rich with flavor and just the right texture.  Plus it is guilt free!  Your first step is to prepare your vanilla bean.  Split bean the long way, scrap seeds out into sauce pan, for extra flavor place vanilla bean in sauce pan as well and allow to steep with the rest of the brew.

Vanilla Bean

In this recipe I used a vanilla bean and vanilla powder.  However, you can substitute vanilla extract (1/2 teaspoon) for the vanilla bean.

Next, In a sauce pan brew unsweetened coconut milk, vanilla powder, xantham gum (optional), vanilla bean, and honey.  Brew about 20 minutes.  Allow to cool about 10 minutes, but not all the way.  You want the egg yolks to cook.  This is the most important step!  Listen closely.  Add 4 egg yolks to the ice cream mixture ONE spoonful at a time.  If you add more you will make scrambled eggs.  Patience!

Vanilla Bean Icecream 2

Ingredients:

  • 2 cans of unsweetened coconut milk (13 oz)
  • 1/4 teaspoon vanilla powder
  • 1/4 teaspoon xantham gum (optional)
  • 1 vanilla bean
  • 3 tablespoons of honey
  • 4 egg yolks

Directions:

  1. Prepare vanilla bean: split bean the long way, scrap seeds out into sauce pan, for extra flavor place vanilla bean in sauce pan as well and allow to steep with the rest of the brew.
  2. In a sauce pan brew unsweetened coconut milk, vanilla powder, xantham gum (optional), vanilla bean, and honey.  Brew about 20 minutes.
