Yum! Time for another fabulous meal prepped salad! If you are eating boring salads… you are doing it wrong! This salad was inspired by Panera Breads Fuji Apple Chicken Salad (however, I think mine tasks better!)
Don’t make just one salad. While you are chopping, just chop up some extra and layer each ingredient to your mason jars for tasty salads all week!
For an apple short cut, or a crunchy change try apple chips. When you choose your apple chips read the ingredients to make sure they don’t add extra sugar, apples are sweet enough on their own 😉 If you choose to use fresh apples squeeze some lemon juice on your apple slices to keep them from browning.
Don’t forget to pre-grill your chicken and portion it out for all your salads this week!
- 3 carrots sliced
- 1/2 red onion diced
- 1 cup walnuts
- 5 cups spring salad
- 2 cups micro greens (optional)
- Apple of choice (fresh sliced with a dash of lemon juice to reduce browning, or apple chips)
- Layer ingredients (carrots, onion, walnuts, spring salad, micro green)
- Bag apples and chicken separate
- Grab and go!
