These “Peppermint Patties” are perfect for when you are craving a chocolate treat, but don’t want to ruin all of your hard work!
Have I ever mentioned I love coconut! Coconut is high in dietary fiber, has a low glycemic index, and improves digestion. To make these delicious treats begin by putting the unsweetened coconut and coconut flower in the food processor. Mix until coconut is fine. Add coconut oil melted, coconut milk, honey, and peppermint extract to the food processor and mix. Use a cookie scoop and scoop onto a cookie sheet. Use a spatula to smooth into disc shapes. Place in the freezer for 20 minutes.
Melt dark chocolate with coconut oil. Dip frozen coconut discs in chocolate. Top with cacao nibs. Freeze for 20 minutes. Enjoy!
