My first job was a crew member at McDonalds. I still remember the hype of the shamrock shake! Every year people would swarm our McDonalds as soon as it was released. Every year we would run out of mixture before St. Patricks day. It is baffling to me how unhealthy the shamrock shake is! According to McDonalds website, in a small (yes a small!) shamrock shake there is 530 calories, 15 grams of fat, 73 grams of sugar, and 86 carbs! Ouch! So I set out to make a clean paleo shamrock shake. I attempted many recipes I found on Pinterest and none of the shakes I tried were able to capture the creamy texture of the McDonalds shake. After trial and error of my own, I was able to create the perfect creamy minty shake! The secret to the creamy texture is to freeze your shamrock mixture in an ice cube tray instead of using standard ice cubes which water down shake. I hope you enjoy this delicious shake without the guilt!
Ingredients
- 1 can unsweetened coconut milk
- 1 teaspoon mint extract
- 2 tablespoons honey
- 1/4 cup almond milk
Directions
- Combine 1 can of unsweetened coconut milk, 1 teaspoon mint extract, 2 tablespoons of honey in a sauce pan. Stir on medium heat for about 8 minutes until mixture is fully combined.
- Fill ice cube tray with mixture and allow to freeze.
- Place shamrock shake ice cubes in a blender with 1/4 cup almond milk. Add more milk to obtain desired texture.
