Brussel Sprouts are a strange looking vegetable from the Brassica family which also includes kale, broccoli, and collard greens. Not only are they full of great nutrients and protein, but full of anti-oxidants which can protect against cancer. These are super easy to cook and often very cheap when purchased from a local farmer. They grow on a stock as shown above.
You will want to cut each sprout off the stock and rinse under room temperature water.
Slice into quarters as demonstrated above.
Toss with 12 Brussel Sprouts and 4 diced cloves of garlic with two tablespoons of olive oil, salt, and pepper. Cook at 350 degrees on a broiler pan for 30 minutes.

- Quarter Brussel sprouts and garlic. Toss with olive oil, salt, and pepper.
- Bake at 350 degrees for 30 minutes. Watch your sprouts, each oven is different and sprouts different times of year can be different sizes.
