This mason jar salad is so dynamic and tasty it will have your taste buds singing all week long!! I love to pack a weeks worth of these on Sunday and enjoy them for my lunch at work all week long. (And yes, they will last a whole week!)
Ingredients:
- 2 cans (15.5 oz) black beans
- 1/2 cup water
- 1 cup onion diced
- 3 cups frozen corn
- 1 teaspoon taco seasoning
- 2 cups of pico de gallo
- 1 green pepper
- 1 cup red cabbage sliced
- 8 cups romaine lettuce
Directions:
- Combine the black beans, water, and onion in a skilled and simmer for six minutes.
- Saute corn and taco seasoning for five minutes on medium heat.
- Layer your jars: black beans, corn, pico de gallo, green pepper, cabbage, and lettuce.
For picky husbands add some cheese and throw this in a wrap. Warm up until slightly toasted… they will never know!
Also try our home made taco seasoning. It is a staple in my house! The seasoning remains perfectly tasty without added chemicals.
