This salsa is bursting with fresh flavor! The sweet peaches and mango, paired with the heat of the jalapeño, make this a favorite of mine. It dresses up so many dishes and was featured with the Sweet Potato Burger earlier this month.
- 1 mango — peeled and diced (about 1 1/2c.)
- 4 mini sweet peppers — diced (about 1 c.)
- 4 Jalapeño peppers — diced (about 1/4c. rounded)
- 4 roma tomatoes — diced (about 2 c.)
- 1/2 red onion — diced (1/2c. or LESS if you get a really strong one)
- 1 lime — juice and pulp (about 1/4c.)
- 3 peaches — peeled and diced (about 1 1/2c.)
- 1 TBS. honey
If you slice into your onion and it is very potent, you may want to start out by adding only 1/4c. Recently, I ran into a batch that was particularly potent. You do not want to over power the salsa. The same is true with the jalapeño pepper. If you are weary of how spicy they may be, add about half. You can always add more. When chopping the jalapeño, be careful of skin contact with the seeds and juice. Wash hands thoroughly after touching them and wear gloves if you are sensitive. Combine all ingredients in a bowl and gently mix to evenly distribute. Let flavors marinate for at least 30 minutes. Keep refrigerated in a sealed container.
