I love a good Pesto! This one is wonderful pesto packed with flavor and nutrients.
Place one cup fresh basil packed full, 1/4 cut walnut oil, 1 tablespoon grated parmesan, 1 clove garlic, 2 tablespoons chopped walnuts, and 1/2 tablespoon lemon juice in a high power blender or food processor. Blend until desired consistency.
To cook your zucchini noodles. Use a spiralizer to cut zucchini into noodles, you can find them at most stores for about $10. Blanch them in a pot of boiling water for about a minute or two. You want to cook them just until they are hot, since by nature they are already very soft. Drain and enjoy!
