There is something so delightful about a bowl of ice cream.  Except, when you are lactose intolerance.  This clean ice cream recipe is delicious and lactose free!

Coconut Milk

Start with unsweetened coconut milk.  The above are two I have tried for this recipe and work well.

In a sauce pan brew two cans of unsweetened coconut milk, 2 star anise, 15 cloves, 15 all spice berries, 20 white peppercorns, 10 cardamon pods, 3 bags black tea bags, 2 tablespoons of honey.  Brew about 30 minutes until golden brown.

Strain out the seeds and spices.

This is the most important step!  Listen closely.  Add 4 egg yolks to the ice cream mixture ONE spoonful at a time.  If you add more you will make scrambled eggs.  Patience!IMG_2603

Allow mixture to cool, then use your ice cream mixture as the instructions state.

  • 15 whole cloves
  • 15 whole all spice berries

Directions:
