I love creating new recipes… what I love more is when my meat-and-potato loving husband falls head over heels in love with this clean vegetarian meal!
I paired my portobello burger with a side of sweet potato fries, broccoli, and a clean lemon lime soda to sip on!
This recipe began with these beautiful portobello mushrooms mushrooms I found at the local farmers market. I spoke with the farmer, he told me he grows them organically on his property and picked them just that morning! Cant get any fresher than that!
I also picked up some yummy topping for my burgers while at the market! Sometimes new foods are a tough sell for husbands or children. Dressing them up with fresh tomatoes, sprouts, spring lettuce, and red onions will help! For the buns I used the Cauliflower Buns! Yum yum!
To prepare the mushrooms wipe them clean of access dirt with a wet cloth or paper towel. Prepare a marinade of 3 garlic cloves chopped, 6 tablespoons of olive oil, 1/2 teaspoon thyme, 1 tablespoon balsamic vinegar, 1 tablespoon coconut aminos* (you can substitute regular soy sauce if you prefer.) Allow three portobellos to marinate for 30 minutes to an hour. I used this time to prepare my sweet potato fries. Preheat the grill to medium high. Cook the mushrooms for 5 minutes each side. Dress and enjoy!
*If you are looking for a soy free soy sauce option try coconut aminos! I personally use the website vitacost to purchase my coconut aminos because I find it is cheaper than the supermarket and more accessible than health food stores. If you would like to use our referral you will receive $10 off your first order of $30. No pressure, just an offer from one deal lover to the next: http://goo.gl/l8IpJE
