This recipe began with these beautiful portobello mushrooms mushrooms I found at the local farmers market.  I spoke with the farmer, he told me he grows them organically on his property and picked them just that morning! Cant get any fresher than that!

I also picked up some yummy topping for my burgers while at the market!  Sometimes new foods are a tough sell for husbands or children.  Dressing them up with fresh tomatoes, sprouts, spring lettuce, and red onions will help!  For the buns I used the Cauliflower Buns!  Yum yum!

To prepare the mushrooms wipe them clean of access dirt with a wet cloth or paper towel.   Prepare a marinade of 3 garlic cloves chopped, 6 tablespoons of olive oil, 1/2 teaspoon thyme, 1 tablespoon balsamic vinegar, 1 tablespoon coconut aminos* (you can substitute regular soy sauce if you prefer.)  Allow three portobellos to marinate for 30 minutes to an hour.  I used this time to prepare my sweet potato fries.  Preheat the grill to medium high.  Cook the mushrooms for 5 minutes each side.  Dress and enjoy!

  • 3 large portobello mushrooms
