Apple Pancake

Low on ingredients and hungry for flavor?   This recipe turns one apple into a breakfast treat.  Apple Pancake

1 large apple cored, peeled, and thinly sliced

1c old fashioned oats

¼ c pure maple syrup

3 eggs

1c almond milk

1 tsp vanilla

1 tsp cinnamon

Preheat oven to 375 degrees. Spray glass pie pan with olive oil. Arrange apples in the bottom of the pan. Place remaining ingredients in blender and process until smooth. Pour batter over apples. Bake approximately 25 minutes until puffed and browned. Enjoy as is or with additional maple syrup on top.
