Apple Turkey Breakfast Sausage

Apple turkey breakfast sausageI often refer to sausage as “mystery meat”.  Who knows what is in it?  This is a healthy, clean version that is simple to make, no mystery involved!

1 lb. freshly ground turkey 93/7

1 medium apple, cored and grated with skin on

½ c. finely chopped onion

1 TBS finely minced garlic

½ TBS thyme

1 tsp sage

½ tsp ground mace

1 tsp sea salt

½ tsp freshly ground pepper

1 egg

(coconut oil for cooking, not used in recipe)

Combine all ingredients and mix thoroughly. Form patties with ½ c mixture. Melt 1 tsp coconut oil on non stick skillet. Add sausage and cook for 4 minutes or until the bottom of the sausage begins to brown. Turn sausage and press down gently with the back of the spatula. Cook 4 more minutes on the other side or until cooked through.

Even though this is a quick and easy recipe, you may be thinking you cannot make fresh sausage every weekend.  I turned one batch of this recipe into brown and serve sausage.  I placed the mixture in a disposable pastry bag with no tip.  I piped 36 sausage onto a parchment lined sheet pan and baked for 12 minutes at 350 degrees. Once the sausage cooled, I packaged it in individual freezer bags and now have plenty of healthy breakfast sausage  ready to go!

Ingredients
