Have I ever mentioned I love my crockpot! On a day I know I will have a busy evening I dump all my ingredients into the crockpot and dinner is ready for me when I get home from work.
This is a fantastic clean stew recipe that everyone in your family will love on a chilly fall day.
Beef Barley Stew
Ingredients
Stew
- 1 pound stew beef
- 1 cup onion quartered
- 2 cups carrots sliced
- 1 cup celery sliced
- 1 cup corn
- 3/4 cup barley
Broth
- 1 tablespoon garlic minced
- 1 tablespoon “Better Than Bouillon”
- 5 cups water
- 3/4 cup of tomato sauce
- 1 teaspoon parsley
- 1/2 teaspoon oregano
- 1/4 teaspoon thyme
- 1/4 teaspoon ground black pepper
Directions
- Make clean broth by mixing together all of the ingredients listened under broth in the crockpot.
- Add all of the ingredients listed under stew except the barley.
- Allow the stew to cook on low for 8 hours. Add in barley and cook on low for one more hour.
