When the weather warms up and its time to fire up the grill this is one of my all time favorite recipes! It is dynamic and full of flavor! There are a few layers so read through the directions, but it is an easy and fun recipe your whole family will love. Shrimp
Ingredients:
- 12 oz shrimp – peeled, deveined, tail off
- 1/4 cup coconut water
- 2 tablespoons taco seasoning
- Juice from 1 lime
Directions:
- Mix the coconut water, taco seasoning, and lime juice well. Submerge shrimp and allow to marinate for one hour.
- Heat the grill to medium high. Skewer shrimp. Grill until the shrimp are opaque and firm (about 7 to 8 minutes.)
Zesty Yogurt Sauce
Ingredients:
- 2 chipotles
- 1 tablespoon Adobados sauce
- 1 cup greek yogurt
Directions:
- I purchase the can of chipotles in Adobados sauce. Remove two chipotles (more or less based on the amount of heat you prefer) and 1 tablespoon of sauce. Dice chipotles and mix well with sauce and yogurt.
- Drizzle over shrimp tacos
