Stuffed Pepper Soup

This soup is lean and full of goodness!  Baked stuffed peppers are one of my favorite meals, but they can be time consuming to bake and don’t pack in to-go lunches well.  Stuffed pepper soup has all of the flavor and requires just one pot to bake.  Meal prep it in a mason jar and it is the perfect grab-and-go meal.

Stuffed Pepper Soup Meal Prep

Start by browning 20 oz ground turkey at the bottom of a large stock pot or dutch oven.  Sprinkle with a touch of salt, pepper, and garlic powder.  Remove turkey and set aside.  Salute 1 red pepper, 1 green pepper, and 1 onion until onion is translucent.

IMG_3732Combine all following ingredients (including turkey) and allow to simmer for 30 minutes.  Cook brown rice separate and mix into soup when ready to eat.

Ingredients
  • 20 oz ground turkey
  • 1 red pepper diced
  • 1 green pepper diced
  • 1 onion diced
  • 2 cans diced tomatoes 14 oz
  • 1 can tomato sauce 14 oz
  • 3 cups beef stock
  • 1 tsp oregano
  • 1 tsp basil
  • 1 tsp parsley
  • 2 bay leaves
Instructions
  1. Brown ground turkey in dutch oven
  2. Remove turkey from pot and set aside
  3. Saute onion and pepper until onion is translucent
  4. Add in all ingredients (including turkey) and simmer for 30 minutes
