Rice is a wonderful way to lighten up a meal….unless it is sticky and mushy. This simple recipe will add a delicate touch to your meal and plenty of the flavor that The Clean Cooks are known for. Throw away any idea you may have about the water to rice ratio and try this method.
I will confess, if you do not already know, that I am a meal prep maven and never miss the opportunity to make minutes count in the kitchen. I never measure out of a bag of rice. You will not see half a bag with a twist tie just waiting for the next time I am going to serve rice. I buy a 1 pound bag of long grain brown rice and I cook a 1 pound bag of rice. I will serve it under Shish Kabob one night, put a rubbermaid container of it away in the refrigerator for Chicken Fiesta Bowls a few days later, and I will portion the rest into 1/2 cup zip lock bags and place in the freezer for a meal prep side.
- 1 pound long grain brown rice (2 1/2c)
- 2 TBS diced onion
- 1 TBS olive oil
- 1 tsp sea salt
- 4 c water — use chicken or beef broth to get even deeper flavor
Use a deep sauté pan to make rice. It helps the rice to cook evenly. Brown onion in pan with olive oil. Add rice and continue to cook on medium heat, stirring often until rice starts to turn golden brown. Add water, sea salt, and seasoning.
Cover and reduce heat to simmer for 30 minutes stirring every 10 minutes. Turn heat off, fluff rice, cover and let set another 10 minutes.
Enjoy!
